IthacaDukkah
The name, Dukkah (Doo-Kah), is the Egyptian Arabic word for “to crush or pound”. Dukkah of all varieties is a blend of roasted nuts and seeds, seasoned with a variety of spices. As the ingredients are ground together, aromatics are released, giving it an intoxicating fragrance!
It was more of a peasant food in Egypt – sold on the street in paper cones, but was also a reasonable way to add flavor to foods. The most unique quality of IthacaDukkah is its versatility. As I’ve been producing it and sampling it out for people to try, a plethora of pairings have been discovered! Would you believe ice cream?? We LOVE combining foods which are toasty, sweet, crunchy, and salty!
IthacaDukkah can be sprinkled on practically anything- salad, soup,veggies, meat, yogurt, and fruit( try cantaloupe and pears!) for a delicious crunch. It is a scrumptiously rich-in-protein-and-good-fat snack to enjoy when you need a lift. The first way I experienced it was as a dry dip, dunking bread or crudites (fresh fennel is my favorite) into olive oil, then into the dukkah.
